


Here’s a perfect vegetarian dish. Large aubergine, diced, salted and stood in colander for 30 mins to draw out the moisture. Washed the aubergine quickly and thoroughly in cold running water. Need to be quick otherwise the aubergine will take up the water. Mixed a small amount of Surti Masala (about one and half tea spoons). Cooked it for 15 minutes in a pan and folded in a small amount of single cream. My wife loved it and I normally wouldn't chose to eat aubergine but I have to say this was absolutely fantastic in flavour and a taste that brings out the texture and flavour of this wonderful vegetable. Deadly simple, authentic and Delicious!
